Sauvignon
This variety, when grown at the northern edge of the wine world (where Krásná Hora is located), is extremely influenced by the vintage, and completely changes its expression. That’s why already during the summer we watch the grapes in the vineyard and try to estimate how each clone will develop, how best to ferment it and which role it should play in the final cuvée. Thanks to Sauvignon, we’ve learned to ferment equally well on the skins, in the barrel and in stainless steel, or when to pick each clone at a ripeness that is optimal for the role it will play in the final blend. I see this wine as an independent feminist you don’t want to leave.
